You’ve got your proteins and carbs covered, so Basically what ever your favorite vegetable is. Mix it up with a batch of mixed vegetables like (squash zucchini, carrots and broccoli)
If concerned about texture and nutrition cook/steam your vegetables no more than 5 minutes or opt for fresh leafy greens mixed with walnuts, dried cranberries tossed with a vinaigrette.
